September Meal Plan – Week 1

Welcome to week one of the September Challenge! This meal plan runs from Tuesday-Sunday, instead of the regular Monday-Saturday, due to the Labor Day holiday.

Tuesday – Buttermilk Herb Chicken, pink-eyed peas, fried okra

Wednesday – Veggie Burgers, Oven Fries, Watermelon

Thursday – Cilantro Lime Chicken (make complete recipe – save leftovers for Sunday), Rattlesnake beans, Red Corn on the Cob

Friday – Fish in Parchment paper, Brown rice, veggie yet to be determined (whatever I can find at the market Thursday)

Saturday – Pizza
When we make pizza, we use sausage and whatever veggies we have in the fridge as toppings. Be creative – or add toppings to your grocery list!

Sunday – Chicken tacos (use leftover Cilantro Lime Chicken and add your favorite taco toppings)

Grocery List:
boneless, skinless chicken breasts (3 pounds)
buttermilk
dijon mustard
potatoes
2 limes
garlic
cilantro
salsa verde
bulgar wheat
pinto beans – 1 can
monterey jack cheese
carrots
celery
tilapia (1 pound)
ground sausage
mozzarella cheese
Red or orange bell pepper
tomato paste
28 ounces diced tomatoes
pizza dough (we like it best from Trader Joe’s)
tortillas
