Meal Plan – October Weeks 2 & 3

Fall is here and the crockpot is working! I always love to use my crockpot, but especially during the cooler months, when daylight is shorter and bedtime comes earlier. For some reason, my toddler is crankier in these fall and winter months and we do everything we can to have dinner ready early so we can get her to bed!

I missed giving you a meal plan last week – mostly because I didn’t do so well at planning it myself. We got a great CSA box and I tried to creatively wing our meals each day. We ended up with not such a bad week of meals on the table, and I didn’t have to buy many groceries either!

This week you get double the inspiration – with last week’s menu as well as this week’s plan.

My favorite fall breakfasts:
Oatmeal in the crockpot
Eggs & toast
Apple oat pancakes

Lunches this month consist of leftovers or sandwiches. With days getting shorter, there just isn’t enough time to do extra for lunches. Luckily most of our crockpot and soup recipes make big batches, so there’s plenty left for future meals!

Week 2 Dinners
Monday – Fish sticks, oven fries, roasted okra

Tuesday – Radish Mushroom Chicken Soup – This one came from one of the Mama Baby Love cookbooks and I was pleasantly surprised by it. I had the radishes from my CSA box and mushrooms from a previous meal planned that I didn’t make, so I experimented with it. It was amazing. It made so much we froze half and had leftovers for later in the week!

Wednesday – We went to Mellow Mushroom. No inspiration there – sorry!

Thursday – Chicken & Veggie Stirfry – We don’t really follow a recipe for this one. We use whatever veggies we find in our fridge. Last week it was bell peppers, onion, snow peas, carrots, & vivid choy pac choy (a variation of bok choy). We had some leftover chicken in the fridge, so we threw that in too. If you make a double batch of this recipe, you can make it into fried rice later in the week.

Friday – Eggplant & Chickpea Stew (I don’t recommend this one … at all … and therefore I refuse to give you the recipe.)

Saturday – Siriacha BBQ Chicken, Soy Glazed Sweet Potatoes, Fried Okra

Sunday – Leek Potato Soup, Cornbread – The recipe for this soup came from the same cookbook as the Radish Soup we had on Monday. It too made so much we had enough to freeze as well as lunches this week. Stay tuned for the cornbread recipe – it turned out to be the best I’ve ever had!

Week 3 Dinners
Monday – Roasted Vegetable Soup with Herbed Dumplings

Tuesday – Chicken, Rosemary & Apple Stew – from the same cookbook. Can you tell I’m loving some Mama Baby Love these days?

Wednesday – Grilled Salmon with Braised Pac Choy & Rice – I don’t have recipes for these yet … but I thought they all sounded good together. I’ll probably figure it out the day of.

Thursday – Leek Vegetable Stew

Friday – I don’t have a plan for this day. I’ll likely take a look at what’s in my refrigerator and make something up. Maybe taco salads? I’ll try to steer away from soup or stew since that’s what the rest of the week looked like!

Saturday – Pumpkin Chili (You guessed it … Mama Baby Love)
